The History of Recipes
Written recipes as a concept can be found far back into the distant past, in truth as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. In practice though, mostly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
During the time of the Romans a roman called Apicius created a few scripts which described recipes enjoyed by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into starters, main course and dessert, something we still use today. Aspicius also tells us how the chefs of Roman times used many different herbs and spices, including a few you will know such as thyme, fennel and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many new foods and spices from the East, including spices such as coriander, parsley, and basil. These new culinary innovations prompted an increase in manuscripts on food, the majority of which are kept safe in private libraries. By the arrival of the twentieth century, cooking books were in high demand, mostly due to higher levels of literacy, more leisure time and having more disposable income. |
