The History of Recipes
It is possible to trace the history of written recipes back into history, at least as far into history as the Egypt of the Pharoahs, and maybe further still. In practice though, these, early records were just primitive hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe found, according to historians are a few stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Later on, in The time of the roman empire around 25BC a man called Apicius compiled a few scripts detailing recipes cooked by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into starters, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the Roman cooks were skilled in the use of many different aromatic flavours, including some that we all recognise such as thyme, mint and dill. During the following few hundred years, the wealthy families of Wesstern Europe competed to offer the most extravagent banquests, and as a result the best cooks and their recipe collections were much in demand. However, it was during the 19th century that fine cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the 1900s, recipe publications are in great demand, as a result of increased literacy, people having more spare time and having more money. |
