The History of Recipes
Written cooking instructions as an idea can be found back into the far past, in fact as far into history as the Egyptians, and potentially, even further back. Having said that, mostly, these ancient cook books were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, are a few tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. During the time of the Roman Empire a roman called Apicius assembled a few documents detailing recipes enjoyed by the Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, entrees and dessert, something we still use today. He also describes how the early Romans made use of many different aromatic flavors, including a few you will know for example basil, rue and parsley. Over the following few hundred years, the upper-class families of Wesstern Europe competed to serve up the most extravagent banquests, and as a consequence, chefs and their collection of recipes were greatly in demand. However, it wasn`t until the 1800s that formal cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and writing down recipes of the day. By the arrival of the 20th century, cookery publications were highly popular as a result of more people being able to read, leisure time and being a little richer. Like it or not, the introduction of television brings us TV cooks and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like those on sites such as this. |
