The History of Recipes
Written cooking instructions as a concept can be tracked far back into ancient history, at least as far as the Egypt of the Pharoahs, and potentially, even further back. Having said that, sadly, these old recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
During Roman times around 25BC a man called Apicius assembled a few documents detailing recipes cooked by wealthy Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, main meal and afters, something we still use today. Aspicius informs us how the cooks of Roman times made use of many different aromatic flavours, including many that are still in use today such as thyme, rue and asafoetida. In the fifteenth century, the Crusaders brought back many spices and herbs from the Middle-East, including coriander, parsley, basil and rosemary. These new herbs and spices caused an eruption in manuscripts on food, most of which are now in academic collections. By the arrival of the 1900s, recipe books are in great demand, mostly due to increased literacy, people having more leisure time and a general increase in wealth. |
