The History of Recipes
It is quite feasible to track the history of written cooking instructions far back into history, in truth as far back into history as the ancient Egyptians, and maybe further still. Having said that, sadly, these early cookbooks were just very simple pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe found, according to experts are a few clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. Moving on, we find a couple of interesting cookery books dating from the 14th Century - a recipe book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these have no connection with the curry that is familiar to us all today, but rather descriptions of the types of meals on the menus of the upper classes of that time. Later, in the 15th century, people returning from the crusades brought back many new spices and herbs from the Middle-East, including coriander, parsley, and basil. These new foods and spices prompted an explosion in manuscripts on food, most of which still exist in academic collections. During the following few centuries, the powerful and rich houses tried to serve the most exotic banquets, and as a result the best cooks and their recipes became highly prized. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, verifying, and recording the recipes of their peers. By the advent of the 1900s, cook books were increasing in popularity mostly due to increased literacy, people having more leisure time and disposable income. Like it or not, the introduction of TV gave us celebrity chefs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes just like those on the site you are now reading. |
