Ingredients
1 cup chocolate wafer crumbs
3 tbsp margarine, melted
24 oz cream cheese, softened
3/4 cup sugar
1/4 cup unbleached all-purpose flour
3 each large eggs
1/2 cup sour cream
1 tsp vanilla
1 cup mini semi-sweet chips
Directions
Combine crumbs and magarine; press onto bottom of 9-inch springform
pan. Bake at 350 degrees F., 10 minutes. Combine cream cheese, sugar
and flour, mixing at medium speed on electric mixer until well
blended. Add eggs, one at a time, mixing well after each addition.
Blend in sour cream and vanilla. Stir in chocolate chips and pour
into crust. Bake at 350 degrees F., 55 minutes. Loosen cake from rim
of pan; cool before removing rim of pan. Chill. Garnish with
whipped cream and fresh mint leaves, if desired.

The History of Recipes
It is possible to trace the history of `recipes` back into the far past, in truth as far back into history as ancient Egypt, and possibly even further than that. Interesting though that maybe, generally, these old cookbooks were just basic hieroglyphic instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to food historians are some clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Later on, in The time of the roman empire 25BC a man called Apicius created a number of documents which described recipes enjoyed by the Romans. In his scrolls, he describes how the roman meals were split into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the Romans used many spices, including many that are still in use today for example basil, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from middle-east cuisine, such as coriander, parsley, basil and rosemary. These new spices and herbs led to an increase in manuscripts on cookery, some of which are kept safe in private cookery archives. During the following few hundred years, the rich families of Wesstern Europe tried to serve up the most exotic meals, and because of this cooks and their collection of recipes were at a premium. Even so, it was during the nineteenth century the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and recording recipes of the day. The arrival of television brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on this web site. |
