The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into ancient history, in truth as far into history as the early Egyptians, and possibly even further than that. In practice though, sadly, these early cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to food historians are a few ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into The time of the romans 25BC a man called Apicius created some scripts which described recipes enjoyed by his fellow Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the ancient cooks were skilled in the use of a wide range of spices and herbs, including a few you will know like bay, rue and asafoetida. During the next few hundred years, the upper-class families of Europe tried to serve up the most exotic banquets, and because of this cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes to help cooks of their time. By the time we get to the twentieth century, cooking books are increasing in popularity mostly due to higher levels of literacy, people having more free time and having more money to spend. |
