The History of Recipes
Recipes as a concept can be found back into the distant past, in fact as far back as the early Egyptians, and quite possibly further than that. In practice though, these, old cook books were just basic pictorial instructions for preparing food.
In an interesting twist, the most ancient recipe in existence, according to historians is a collection of tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Progressing into Roman times 25BC a man called Apicius assembled some documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into starters, main course and desserts, something that is very familiar to us today. This early Roman chef recounts how the ancient cooks made use of many different aromatic flavors, including some familiar names such as basil, rue and dill. Continuing our culinary historical journey, there are some interesting books dating from the fourteenth century - one book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, they are unconnected to the indian curry that appears on menues today, but instead recipes for the types of food prepared by the cooks of the upper classes of the time. Later on, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cooking, including coriander, parsley, and basil. The introduction of these new culinary ideas was responsible for a torrent in recipe books, some of which are now in private libraries. Over the succeeding few centuries, the powerful families of Europe strove to offer the most exotic banquets, and as a consequence, the best cooks and their recipes were greatly in demand. However, it was during the nineteenth century that cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and writing down the recipes that were being prepared for the better households. When we get to the twentieth century, recipe publications were greatly in demand due to more people being able to read, people having increased free time and having more money. The TV revolution brought us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes like those on sites such as this. |
