The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into the far past, in fact as far as the Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these ancient records were just very basic hieroglyphic recipes for preparing food.
In an interesting twist, the oldest recipe discovered, according to food historians is a series of tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius compiled a few documents detailing recipes cooked by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main meal and afters, a very modern way of dining. He also describes how the chefs of Roman times made use of a good variety of aromatic flavours, including some familiar names for example basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us many foods and spices from the holy land, including parsley, basil and rosemary. These new foods and spices led to an explosion in manuscripts on food, most of which are now in private libraries. When we get to the twentieth century, cookery publications are in great demand, as a result of better eduction, people having more leisure time and having more money to spend. The TV revolution brings us TV cookery programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
