The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into the far past, in fact as far as early Egypt, and possibly even further. Interesting though that maybe, these, old cook books were just very simple hieroglyphic instructions for food preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts are a few tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the romans around 25BC a man called Apicius created a number of documents showing how to cook the recipes cooked by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, a very modern way of dining. This early Roman chef recounts how the cooks of his times used a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example basil, rue and parsley. For the decades that followed, the rich families of Wesstern Europe strove to offer the most extravagent banquests, and as a result the best cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the 19th century that fine cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and publishing recipes common in their social group. By the time we get to the 20th century, cooking publications are greatly in demand as a result of increased literacy, people having more leisure time and having more money to spend. |
