The History of Recipes
We can read the history of `recipes` far back into the distant past, certainly as far back into recorded history as ancient Egypt, and possibly even further. Having said that, in the main part, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history are some stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents detailing recipes cooked by the Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main course and dessert, something we still use today. Aspicius also recounts how the Roman chefs made use of many different aromatic flavours, including some that we all recognise like bay, rue and asafoetida. Over the following few centuries, the powerful families of Europe competed to offer the most exotic meals, and because of this chefs and their collection of recipes increased in prestige. Nevertheless, it was during the nineteenth century that haute cuisine and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collating, trying out, and writing down recipes to allow everyone to enjoy them. When we get to the 1900s, recipe publications were in great demand, mostly due to higher levels of literacy, more spare time and a general increase in wealth. The arrival of TV brought us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like those on our site. |
