The History of Recipes
We are able to track the history of written recipes back into ancient history, certainly as far into history as ancient Egypt, and maybe further still. However, mostly, these old cook books were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians is a series of stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. As we move into The time of the romans around 25BC a man called Apicius created some scripts describing recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main meal and desserts, a very modern way of dining. Aspicius describes how the cooks of his times were skilled in the use of many spices and herbs, including many that are still in use today such as bay, rue and dill. Later, in the fifteenth century, knights returning from the crusades brought back many foods and herbs from Arab countries, including coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an explosion in books on cooking, the majority of which are now in academic collections. During the following few hundred years, the upper-class families of Europe competed with each other to lay on the most exotic meals, and as a consequence, the best cooks and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that fine cooking and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, testing, and recording popular recipes of the day. By the advent of the 20th century, cooking publications were in high demand, mostly as a result of more people being able to read, people having more spare time and having more money to spend. |
