Ingredients
CHOCOLATE COOKIE CRUST
1 cup vanilla wafer crumbs (about 30 wafe, rs, crushed)
1/4 cup hershey's cocoa
1/4 cup powdered sugar
1/4 cup butter or margarine, melted
FILLING
24 oz cream cheese, softened
1 cup sugar
3 tbsp all-purpose flour
1 tsp pumpkin pie spice
1 cup canned pumpkin
4 eggs
1 1/2 cup hershey's mini chips (semi-sweet ch, ocolate)
CHOCOLATE LEAVES (OPTIONAL
1 non-toxic leaves
1/2 cup hersheys's mini chips (semi-sweet c, hocolate)
Directions
Prepare CHOCOLATE COOKIE CRUST. Increase oven temperature to 400 F. In
large mixer bowl, beat cream cheese, sugar, flour and pumpkin pie
spice until well blended. Add pumpkin and eggs; beat until well
blended. Stir in small chocolate chips; pour batter into prepared
crust. Bake 10 minutes. Reduce oven temperature to 250øF; continue
baking 50 minutes. Remove from oven to wire rack. With knife, loosen
cake from side of pan. Cool completely; remove side of pan.
Refrigerate before serving. Prepare and garnish with CHOCOLATE
LEAVES, if desired. Cover; refrigerate leftover cheesecake. 10 to 12
servings.
CHOCOLATE COOKIE CRUST: Heat oven to 350 F. In medium bowl, stir
together 1 cup vanilla wafer crumbs (about 30 wafers), 1/4 cup
HERSHEY'S Cocoa, 1/4 cup powdered sugar and 1/4 cup (1/2 stick)
melted butter or margarine. Press mixture firmly onto bottom and 1/2
inch up side of 9-inch springform pan. Bake 8 minutes; cool slightly
CHOCOLATE LEAVES: Thoroughly wash and dry several non-toxic leaves. In
small microwave-safe bowl, place 1/2 cup HERSHEY'S MINI CHIPS
Semi-Sweet Chocolate. Microwave at HIGH (100%) 30 to 45 seconds or
until smooth when stirred. With small soft-bristled pastry brush,
brush melted chocolate on backs of leaves. (Avoid getting chocolate
on leaf front; removal may be difficult when chocolate hardens.)
Place on wax paper-covered cookie sheet; refrigerate until very firm.
Beginning at stem, carefully pull green leaves from chocolate leaves;
refrigerate until ready to use.

The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions far back into distant history, in truth as far back as pharonic Egypt, and maybe further still. However, in the main part, these ancient records were just primitive hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe found, according to historians is a series of stone tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Progressing into The time of the romans around 25BC a roman called Apicius wrote a few documents which described recipes cooked by his fellow Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main meal and afters, something that is very familiar to us today. This early Roman chef tells us how the chefs of Roman times used many different herbs, including a few that will be familiar to modern chefs for example bay, mint and dill. Later, in the 15th century, people returning from the crusades brought back many new foods and spices from the East, including parsley, basil and rosemary. These new herbs and spices prompted an explosion in manuscripts on cooking, some of which are kept safe in private cookery archives. By the advent of the 1900s, cook books were starting to become popular as a result of increased literacy, people having more spare time and having more money. Like it or not, the introduction of TV gave us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes like those on the site you are now reading. |
