The History of Recipes
We are able to trace the history of `recipes` way back into antiquity, in truth as far into history as the ancient Egyptians, and maybe even further. Interesting though that is, in the main part, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a series of ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. As we move into Roman times 25BC a roman called Apicius compiled a number of documents which described recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were divided into appetizers, main course and afters, a very modern way of dining. This early Roman chef tells us how the cooks of Roman times were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens for example basil, fennel and parsley. Later, in the fifteenth century, people returning from the crusades brought us many new spices and herbs from Arab cuisine, including spices such as coriander, basil and rosemary. These new foods and tastes led to a torrent in manuscripts on cooking, most of which still exist in private cookery archives. During the next few centuries, the rich and powerful families of Wesstern Europe tried to serve up the most exotic banquets, and because of this chefs and their recipes were highly sought after. However, it was during the nineteenth century that cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, testing, and recording the recipes of their peers. The revolution that is television brings us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on this recipe site. |
