Ingredients
1 cup semi-sweet choc. bits
6 oz cream cheese, softened
1/8 tsp salt
2 eggs separated
3/4 cup brown sugar
2 tsp vanilla
1 cup heavy cream
1 1/2 cup graham cracker crumbs
1/4 cup brown sugar
1 square unsweetened choc. mel
1/3 cup butter
Directions
Melt choc. chips over hot water. Let cool about 10 mins. (any longer
and they will stiffen) Whip cream cheese and salt until light and
fluffy. Gradually add 1/2 cup brown sugar; cream this thoroughly
Blend in egg yolk; one at a time,beating well after each addition.
Add vanilla and choc. to mixture and beat thoroughly. Beat egg whites
into soft peaks. Gradually add remaining sugar and beat until stiff
and glossy. Fold Choc mixture into egg whites. Fold in whipped cream.
Spoon into crust (follows) and chill overnight.
Chocolate Crumb Crust: Combine crumbs and sugar, add choc. and
butter,blending thoroughly. Pat mixture to the bottom and sides of 9
inch pie plate. Chill before adding filling.I also have a great

The History of Recipes
Historians have proved the existence of recipes back into ancient history, in truth as far as the ancient Egyptians, and potentially, even further back. Having said that, mostly, these early records were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe found, according to food historians is a collection of clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As our culinary historical trip moves to more modern times we have two interesting cookery books which date from the fourteenth century - a book entitled `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the spicy food that we all know today, but rather descriptions of the types of food enjoyed by the upper classes. Over the next few centuries, the rich families of the West tried to lay on the most exotic banquets, and as a result the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collecting, trying out, and recording recipes common in their social group. By the arrival of the twentieth century, cooking publications were increasing in popularity mostly due to increased literacy, people having increased leisure time and having more money to spend. The introduction of television brings us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like the ones you can find on our site. |
