The History of Recipes
We can follow the history of written recipes back into history, at least as far as the ancient Egyptians, and possibly even further than that. Interesting though that is, sadly, these old recipes were just primitive hieroglyphic or cunieform recipes for food preparation.
Later on, in The time of the romans around 25BC a man called Apicius compiled a number of scripts describing recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into starters, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Romans were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks for example basil, rue and parsley. For the decades that followed, the wealthy families of Wesstern Europe competed with each other to serve the most exotic banquets, and as a result cooks and their collection of recipes became highly prized. However, it was during the 19th century the formal cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, verifying, and publishing the recipes of their peers. By the time we get to the 20th century, recipe publications are in high demand, mostly due to increased literacy, more free time and disposable income. |
