The History of Recipes
We can read the history of written recipes back into ancient history, certainly as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that maybe, generally, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe discovered, according to historians are some clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. As our culinary historical trip moves on a few more years there are two recipe books dating from the 14th Century : one book titled `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these books are not about the spicy food that is served today, but instead descriptions of the types of food on the menues of the rich people of the period. Over the following few hundred years, the wealthy families of Wesstern Europe competed to serve up the most exotic banquets, and consequentially cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and recording the recipes that were being prepared for the better households. By the arrival of the 20th century, recipe publications are highly popular due to better eduction, people having more free time and having more money. |
