The History of Recipes
Transcribed cooking instructions as an idea can be traced way back into distant history, at least as far into history as ancient Egypt, and maybe even further. Interesting though that maybe, generally, these old recipes were just very basic pictorial recipes for preparing meals.
During the time of the Romans a roman called Apicius assembled a few documents detailing recipes cooked by the Romans. In his publication, he describes how the meals were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the early Romans made use of many spices and herbs, including a few that are still present in modern kitchens like basil, rue and parsley. Over the next few hundred years, the upper-class families of Wesstern Europe competed to offer the most exotic meals, and as a result chefs and their recipe collections were greatly in demand. Even so, it was during the nineteenth century the formal cooking and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, testing, and recording recipes to help cooks of their time. When we get to the 20th century, cookery publications were in great demand, mostly due to increased literacy, increased leisure time and having more money. |
