The History of Recipes
It is quite possible to prove the history of written cooking instructions far back into the far past, at least as far into history as the Egyptians, and possibly even further. Interesting though that maybe, generally, these early cook books were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Continuing our culinary historical journey, we have a couple of cookery books published in the 1300s - one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, they are not about the spicy food that is popular today, but rather accounts of the types of food prepared by the cooks of the nobility of the period. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from the holy land, including spices such as coriander, parsley, and basil. These new herbs and spices was responsible for an increase in books on cooking, many of which still exist in private cookery archives. Over the succeeding few centuries, the upper-class families of Europe competed to serve the most extravagent banquests, and consequentially chefs and their recipes were highly sought after. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy. When we get to the twentieth century, cooking books are highly popular as a result of better eduction, leisure time and being a little richer. The TV revolution brings us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access thousands of recipes like those on this recipe site. |
