The History of Recipes

It is quite feasible to track the history of written cooking instructions way back into history, certainly as far back as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these ancient cook books were just primitive hieroglyphic or cunieform instructions for meal preparation.

The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`.

As we move into Roman times around 25BC a roman called Apicius compiled a few documents describing recipes cooked by wealthy roman citizens. He recounts how the meals were split into starters, entrees and afters, a style of dining still practiced today. This early Roman chef informs us how the ancient chefs made use of a good variety of herbs and spices, including a few that are still present in modern kitchens like bay, rue and dill.

Later, in the 15th century, knights returning from the crusades brought back many foods and herbs from Arab cooking, including coriander, parsley, and basil. The introduction of these new herbs and spices was responsible for a surge in manuscripts on cooking, many of which are now in private collections.

By the advent of the 1900s, cookery publications are in high demand, mostly as a result of more people being able to read, more leisure time and being a little richer.

Like it or not, the introduction of TV brings us cooking programs and the demand for the accompanying recipe books.

Which brings us neatly up to date and the invention of the internet, permitting us all to search through massive numbers of recipes such as those found on our web site.
