The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions way back into antiquity, at least as far back into recorded history as pharonic Egypt, and maybe further still. Interesting though that is, generally, these early records were just simple pictorial instructions for food preparation.
As we move into Roman times 25BC a man called Apicius assembled a number of documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvres, entrees and afters, something we still use today. This early Roman chef informs us how the ancient cooks were skilled in the use of a good variety of herbs and spices, including some familiar names such as thyme, rue and parsley. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from the Middle-East, including spices like coriander, basil and rosemary. These new herbs and spices caused a surge in cookery books, most of which are now in private cookery archives. The revolution that is television brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes such as those found on our web site. |
