The History of Recipes
It is quite feasible to prove the history of written cooking instructions far back into distant history, certainly as far back into recorded history as the Egyptians, and possibly even further than that. In practice though, generally, these ancient cookbooks were just basic hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe in existence, according to academics are some clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a few documents showing how to cook the recipes prepared by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the ancient Romans made use of many different herbs and spices, including a few that are still present in modern kitchens for example bay, rue and asafoetida. In the 15th century, people returning from the crusades brought us many new spices and herbs from Arab cooking, including spices such as parsley and basil. The introduction of these new culinary ideas created an outbreak in manuscripts on cooking, some of which are now in private collections. When we get to the 1900s, cookery publications are starting to become popular mostly due to more people being able to read, more spare time and having more disposable income. The arrival of TV brings us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes like those on our web site. |
