The History of Recipes
It is quite possible to trace the history of written cooking instructions way back into history, in fact as far back as the Egyptians, and maybe even further. Interesting though that is, generally, these ancient recipes were just basic hieroglyphic instructions for food preparation.
During the time of the Romans a roman called Apicius compiled a number of documents describing recipes prepared by wealthy Romans. In his publication, Apicius recounts how the meals were separated into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius also describes how the Roman chefs were skilled in the use of many spices and herbs, including many that are still in use today for example thyme, mint and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many foods and spices from the holy land, including spices such as coriander, parsley, basil and rosemary. These new culinary innovations led to an eruption in publications on food, many of which still exist in private collections. The arrival of TV brings us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on this recipe site. |
