The History of Recipes
It is actually possible to trace the history of written cooking instructions back into distant history, certainly as far back as ancient Egypt, and possibly even further. However, generally, these old cook books were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered, according to experts is a collection of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times around 25BC a man called Apicius compiled some documents describing recipes cooked by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the ancient Romans were skilled in the use of a wide range of spices and herbs, including some familiar names for example basil, mint and dill. Moving on, we have a couple of interesting recipe books which appeared in the 1300s - a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, these are unconnected to the indian curry that is popular today, but rather recipes for the types of meals on the tables of the upper classes of that period. Later, in the 15th century, knights returning from the crusades brought us many foods and herbs from the holy land, including spices such as coriander, basil and rosemary. These new foods and spices prompted an eruption in books on cooking, many of which still exist in private collections. During the following few centuries, the wealthy families of Europe competed with each other to serve the most exotic meals, and consequentially chefs and their recipes became highly prized. Nevertheless, it wasn`t until the 19th century that fine cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, testing, and writing down the recipes of their peers. By the advent of the 1900s, recipe books were in high demand, mostly as a result of better eduction, more spare time and disposable income. The revolution that is television brought us cooking programs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this recipe site. |
