The History of Recipes
We can trace the history of written recipes way back into the distant past, in truth as far into history as the Egypt of the Pharoahs, and maybe even further. In practice though, generally, these old cook books were just primitive hieroglyphic or cunieform instructions for preparing meals.
Later on, in Roman times around 25BC a man called Apicius assembled a number of documents which described recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, entrees and afters, a very modern way of dining. Additionally, he tells us how the ancient Romans used many different spices and herbs, including a few that will be familiar to modern cooks like bay, rue and parsley. For the next few years, the powerful families of Wesstern Europe tried to serve up the most extravagent banquests, and as a result chefs and their recipes increased in prestige. Notwithstanding that, it was during the 1800s that formal cookery and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, testing, and publishing recipes that were common in the better off homes of the day. The introduction of the TV brought us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like those on this site. |
