The History of Recipes
It is possible to trace the history of meal recipes far back into antiquity, in fact as far into history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, mostly, these old recipes were just very simple hieroglyphic instructions for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to experts in ancient history is a collection of tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Later on, in The time of the roman empire 25BC a roman called Apicius wrote a number of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. Aspicius tells us how the early Romans made use of many different herbs and spices, including a few that will be familiar to modern cooks such as bay, rue and parsley. Later, we find some books published in the fourteenth century : a book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the indian curry that is familiar to us all today, but instead recipes for the types of food enjoyed by the rich and powerful of that period. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods and spices from Arab cooking, including coriander, parsley, basil and rosemary. The introduction of these new tastes led to an outbreak in books on cookery, most of which are kept safe in private collections. During the following few hundred years, the powerful and rich houses strove to serve up the most extravagent banquests, and as a consequence, the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s that fine cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, verifying, and publishing the recipes that were being prepared for the better households. By the time we get to the 1900s, cook books are greatly in demand as a result of more people being able to read, more leisure time and a general increase in wealth. The arrival of television gave us TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like those on our web site. |
