The History of Recipes
Academics have traced the existance of recipes far back into history, in truth as far back as ancient Egypt, and possibly even further. However, in the main part, these ancient cookbooks were just very basic hieroglyphic recipes for preparing food.
Interestingly, the most ancient recipe discovered so far, according to academics is a collection of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. During Roman times around 25BC a roman called Apicius wrote a number of documents which described recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals were split into hors d`oeuvre, main course and desserts, a very modern way of dining. Additionally, he tells us how the Romans made use of many herbs and spices, including a few you will know such as basil, fennel and parsley. As our culinary historical trip moves on a few more years we find two interesting recipe books which date from the 1300s - a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, these are not about the indian curry that we all know today, but instead accounts of the types of food prepared by the cooks of the rich and wealthy people of the time. In the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, including spices such as coriander, parsley, and basil. These new herbs and spices prompted a torrent in books on cookery, most of which are now in private cookery archives. During the succeeding few hundred years, the powerful and rich houses tried to offer the most exotic meals, and because of this chefs and their recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that cookery and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down popular recipes of the day. By the arrival of the 20th century, cook books were starting to become popular mostly due to higher levels of literacy, increased leisure time and having more disposable income. Like it or not, the introduction of television gave us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on our web site. |
