The History of Recipes
Recipes as an idea can be observed way back into ancient history, certainly as far back as ancient Egypt, and maybe further still. However, in the main part, these early cook books were just very simple hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius assembled a few documents detailing recipes cooked by his fellow Romans. In his works, he recounts how the roman meals were split into appetizers, main meal and dessert, a style of dining still practiced today. Additionally, he informs us how the cooks of his times used a wide range of spices and herbs, including a few that will be familiar to modern cooks like basil, mint and dill. As our culinary historical trip moves to more modern times there were some recipe books which were published in the fourteenth century : a book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these two books have no connection with the indian food that is popular today, but rather recipes for the types of meals prepared by the chefs of the upper classes of those days. In the 15th century, knights returning from the crusades brought back many foods and spices from the Middle-East, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas led to an explosion in recipe publications, many of which still exist in private libraries. Over the next few centuries, the upper-class families of Wesstern Europe competed to offer the most extravagent banquests, and as a result the best chefs and their collection of recipes increased in prestige. However, it was during the 19th century that haute cuisine and recipe collections really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, testing, and publishing recipes that were common in the better off homes of the day. By the arrival of the twentieth century, cookery publications were in great demand, as a result of increased literacy, people having increased spare time and a general increase in wealth. The introduction of television brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access thousands of recipes just like those on this site. |
