The History of Recipes
We can track the history of `recipes` back into the distant past, in truth as far back into recorded history as pharonic Egypt, and maybe further still. However, these, old cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the roman empire around 25BC a man called Apicius created some documents showing how to cook the recipes prepared by wealthy Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, main meal and dessert, something we still use today. He also describes how the cooks of Roman times used a wide range of herbs, including some that we all recognise such as basil, fennel and asafoetida. In the 15th century, knights returning from the crusades brought back many new spices and herbs from the Middle-East, including coriander, parsley, and basil. The introduction of these new foods and spices was responsible for an explosion in recipe publications, most of which are now in academic collections. When we get to the 1900s, cooking publications were starting to become popular mostly due to increased literacy, people having more spare time and being a little richer. |
