The History of Recipes
We are able to track the history of written recipes back into ancient history, in truth as far back into recorded history as early Egypt, and maybe even further. Having said that, these, early cook books were just very simple hieroglyphic recipes for preparing meals.
As we move into The time of the romans around 25BC a man called Apicius created some documents which described recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into starters, entrees and desserts, something we still use today. He also informs us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs such as bay, fennel and parsley. During the following few hundred years, the rich families of the West tried to serve the most extravagent meals, and because of this chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s that cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing the recipes that were being prepared for the better households. The revolution that is television brings us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on sites such as the one you are reading now. |
