The History of Recipes
Food historians have tracked the existence of recipes way back into history, in fact as far into history as the Egyptians, and possibly even further than that. However, in the main part, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe discovered so far, according to experts are a few stone tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, he describes how the meals were split into starters, entrees and afters, something that is very familiar to us today. This early Roman chef recounts how the ancient Romans made use of many spices, including some that we all recognise such as bay, mint and parsley. As our culinary historical trip moves to more modern times there were some interesting books from the 14th Century - a recipe book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, they are nothing to do with the spicy food that appears on menues today, but instead recipes for the types of meals on the menus of the rich and wealthy people of the time. In the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from Arab cuisine, such as coriander, parsley, and basil. These new herbs and spices was responsible for an outbreak in cookery books, some of which are kept safe in private collections. By the arrival of the twentieth century, cookery publications are greatly in demand due to higher levels of literacy, people having more free time and disposable income. The introduction of television brings us TV chefs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on this recipe site. |
