Ingredients
1/2 cup margarine
1/2 cup sugar
1/2 cup brown sugar
2 eggs -- separated
1 tsp vanilla
2 tsp baking powder
1 tsp baking soda
1/2 tsp salr
3 tbsp milk -- or water
6 oz chocolate chips
1 cup brown sugar
1/2 tsp vanilla
1/2 cup nuts -- , optional
Directions
Beat margarine, sugars, egg yolks, and 1 tsp. vanilla. Mix dry ings.
, and add with milk. Spread in 9"x13" pan. Sprinkle with chocol ate
chips. Beat egg whiles to soft peaks, beat in brown sugar and
vanilla. Fold in nuts. Spread carefully over chips. Bake 30-35 mi n.
at 325F.

The History of Recipes
We can follow the history of meal recipes way back into ancient history, in truth as far into history as the Egyptians, and maybe further still. Interesting though that maybe, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history are a few clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. During the time of the Roman Empire a man called Apicius compiled a collection of documents describing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main meal and desserts, something we still use today. He also informs us how the Romans used a wide range of spices and herbs, including a few that will be familiar to modern chefs like basil, fennel and asafoetida. In the fifteenth century, the Crusaders brought back many spices and herbs from the Middle-East, including rosemary and coriander. These new spices and herbs caused an explosion in recipe books, most of which are kept safe in academic collections. Over the following few hundred years, the powerful families of Europe competed with each other to offer the most exotic meals, and as a result the best cooks and their recipe collections increased in prestige. Even so, it wasn`t until the 19th century that cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing recipes to help cooks of their time. By the arrival of the 20th century, cooking books were in great demand, mostly due to increased literacy, people having more spare time and a general increase in wealth. |
