The History of Recipes
Written cooking instructions as a concept can be tracked back into ancient history, certainly as far back into history as the Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these early recipes were just simple hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history are some tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Moving our culinary historical trip onwards, we have two recipe books from the fourteenth century : a book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the curry that appears on menues today, but rather accounts of the types of food prepared by the cooks of the rich and powerful of those days. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from Arab cooking, including parsley and basil. These new foods and spices created an eruption in manuscripts on cooking, some of which are now in private cookery archives. During the succeeding few hundred years, the powerful and rich houses tried to offer the most exotic meals, and as a consequence, the best cooks and their recipe collections were at a premium. Nevertheless, it wasn`t until the 19th century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and publishing recipes that were common in the better off homes of the day. Like it or not, the introduction of television gave us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like the ones you can find on this site. |
