Ingredients
3/4 cup light cream cheese
1/2 cup sugar
1/2 cup cottage cheese, 1% fat
2 tbsp all-purpose flour
3 tbsp unsweetened cocoa powder
3 tbsp creme de menthe
1/2 tsp vanilla extract
1/8 tsp salt
1 egg
2 chocolate-covered mint
1 wafers
Directions
Preheat oven to 300 degrees; line two mini muffin pans with paper
liners. Place cream cheese, sugar, cottage cheese, flour, cocoa,
creme de menthe, vanilla extract, salt and egg in a blender; cover
and process until smooth. Spoon batter evenly into prepared pans.
Bake for 18 minutes. Cool in pans on wire racks. Cover and chill for
at least 2 hours. Pull a vegetable peeler down the sides of the
candies, making tiny shavings. Top cheesecakes with shavings. (per
cheesecake: 49 calories, 1.7g fat, 31% calories from fat)

The History of Recipes
Academics have proved the existence of recipes way back into distant history, at least as far as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these early records were just basic hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered, according to experts is a collection of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. As our culinary historical trip moves to more modern times there were two interesting books which date from the fourteenth century - a recipe book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, they are not about the spicy food that we all know today, but instead descriptions of the types of meals prepared by the chefs of the rich people of the time. In the 15th century, knights returning from the crusades brought back many spices and herbs from the holy land, including coriander, basil and rosemary. The introduction of these new herbs and spices was responsible for an increase in manuscripts on cookery, the majority of which are kept safe in academic collections. Over the next few centuries, the upper-class families of Wesstern Europe competed with each other to serve up the most exotic banquets, and consequentially the best cooks and their recipes became highly prized. Even so, it was during the nineteenth century that cooking and cookery books became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, testing, and writing down recipes to allow everyone to enjoy them. The introduction of television brings us cooking programs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes such as those found on this site. |
