The History of Recipes
It is possible to trace the history of written recipes back into antiquity, in truth as far back into recorded history as ancient Egypt, and potentially, even further back. However, mostly, these old recipes were just very basic hieroglyphic recipes for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history is a collection of stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. As we move on, there are a couple of interesting cookery books which date from the fourteenth century - a book entitled `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these books have no connection with the indian food that is familiar to us all today, but rather accounts of the types of food served to the nobility of the period. Later, in the fifteenth century, the Crusaders brought back many new spices and herbs from middle-east cuisine, including spices like coriander, basil and rosemary. These new herbs and spices created an explosion in publications on food, most of which still exist in private cookery archives. During the following few hundred years, the wealthy families of the West tried to serve the most exotic meals, and because of this the best chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 19th century that fine cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and recording recipes of the day. By the time we get to the 1900s, cooking books were increasing in popularity mostly due to higher levels of literacy, people having increased spare time and a general increase in wealth. The arrival of television brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, permitting us all to access massive numbers of recipes like those on our web site. |
