Ingredients
1 1/2 cup heavy cream
1 cup milk
1/3 cup sugar
1 1/2 cup mint-chocolate chips, nestles
2 each egg yolks, large
1/8 tsp salt
Directions
In heavy guage saucepan, combine 1 1/4 cups heavy cream, milk, sugar
and 1 cup of mint chocolate chips. Cook over low heat, stirring with
wire whisk, until chips are melted and mixture is smooth. Remove from
heat. In a medium bowl, beat egg yolks and salt until thick.
Gradually add chocolate mixture, beat until well blended. Chill 30
minutes. In a small heavy guage saucepan, combine remaining 1/2 cup
of chips and 1/4 cup of heavy cream. Cook over low heat, stirring
constantly, until chips are melted and mixture is smooth. Remove from
heat and set aside. Pour chilled chocolate/egg mixture into an
electric iceream freezer; churn until thick, about 25 minutes. Pour
in reserved chocolate mixture; churn 10 seconds more. Remove dahser;
cover and store in freeze until ready to serve.

The History of Recipes
It is actually possible to trace the history of recipes back into history, at least as far back as pharonic Egypt, and quite possibly further than that. Interesting though that is, generally, these old recipes were just very simple hieroglyphic recipes for preparing meals.
As we move into Roman times 25BC a man called Apicius compiled a few scripts detailing recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Aspicius also informs us how the cooks of Roman times were skilled in the use of many different spices, including some familiar names like thyme, fennel and dill. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from Arab cooking, including coriander, parsley, basil and rosemary. The introduction of these new culinary ideas caused a surge in books on cooking, some of which are now in academic collections. By the advent of the 20th century, recipe publications are highly popular as a result of more people being able to read, more leisure time and being a little richer. |
