The History of Recipes
It is possible to trace the history of `recipes` way back into the distant past, certainly as far as pharonic Egypt, and quite possibly further than that. In practice though, in the main part, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe discovered, according to historians is a series of tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in The time of the romans around 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he describes how the meals were separated into hors d`oeuvre, main meal and dessert, a very modern way of dining. He also describes how the Roman chefs were skilled in the use of many aromatic flavours, including some that we all recognise like bay, fennel and parsley. For the decades that followed, the rich and powerful families of Europe strove to serve up the best banquets, and consequentially chefs and their recipe collections were greatly in demand. Even so, it wasn`t until the 19th century that haute cuisine and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, trying out, and writing down recipes that were common in the better off homes of the day. By the time we get to the 20th century, cookery publications are greatly in demand due to better eduction, increased leisure time and having more money. |
