The History of Recipes
It is possible to track the history of written recipes back into distant history, in fact as far into history as early Egypt, and possibly even further than that. Interesting though that is, in the main part, these early recipes were just primitive hieroglyphic recipes for meal preparation.
Later on, in The time of the romans around 25BC a man called Apicius compiled some documents showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were divided into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of his times made use of many spices and herbs, including a few you will know like basil, fennel and asafoetida. For the decades that followed, the upper-class families of Wesstern Europe strove to lay on the most exotic banquets, and as a consequence, the best chefs and their recipes could command a high salary. Nevertheless, it was during the 1800s that fine cookery and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, testing, and writing down recipes to allow everyone to enjoy them. By the time we get to the 20th century, cooking books are starting to become popular mostly due to more people being able to read, people having increased spare time and having more money to spend. |
