The History of Recipes
We are able to track the history of `recipes` way back into distant history, in truth as far back as early Egypt, and possibly even further. Interesting though that is, in the main part, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
As we move into The time of the romans around 25BC a roman called Apicius assembled a few documents which described recipes cooked by the Romans. In his scrolls, he recounts how the meals were divided into appetizers, entrees and afters, something that is very familiar to us today. Aspicius recounts how the cooks of Roman times used many different spices, including some that we all recognise like basil, rue and parsley. During the next few centuries, the upper-class families of Wesstern Europe tried to offer the most extravagent meals, and as a result chefs and their recipes became highly prized. However, it was during the 1800s that cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, cookery publications were starting to become popular mostly as a result of increased literacy, increased leisure time and disposable income. |
