The History of Recipes
We are able to track the history of meal recipes far back into ancient history, in fact as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. However, generally, these early records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire around 25BC a roman called Apicius compiled some scripts showing how to cook the recipes prepared by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into appetizers, main meal and desserts, a style of dining still practiced today. He also recounts how the Roman chefs made use of a wide range of herbs and spices, including a few you will know such as basil, rue and dill. During the following few hundred years, the powerful families of Europe competed with each other to lay on the best banquets, and as a result chefs and their recipe collections increased in prestige. However, it wasn`t until the 19th century that cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. By the time we get to the 1900s, cooking books were in high demand, due to increased literacy, more spare time and a general increase in wealth. |
