Ingredients
18 oz semisweet chocolate --
1 coarsely chopped
3/4 cup water
1 orange rind -- grated
10 eggs -- separated
1/2 cup almonds -- chopped
1 oz semisweet chocolate --
1 grated
Directions
Melt chocolate with water on top of double-boiler then beat until
smooth. Add rind and cool to room temperature. Beat the egg yolks and
add a little at a time to the chocolate mixture, mixing well after
each addition. Beat egg whites until firm peaks form. Add a large
dollop of the egg whites to the chocolate misture and beat well. Add
the nuts and beat well again. Fold in the remaining egg whites then
spoon into dessert glasses or a large bowl. Refrigerate for at least
1 hour then serve with whipped cream sprinkled wiht the
gratedchocolate.

The History of Recipes
Written recipes as an idea can be traced way back into ancient history, certainly as far back into recorded history as ancient Egypt, and possibly even further. In practice though, mostly, these early cookbooks were just very simple hieroglyphic instructions for preparing meals.
Continuing our culinary historical journey, we have a couple of recipe books which date from the 1300s ; one book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the indian food that appears on menues today, but instead descriptions of the types of meals prepared by the chefs of the rich and powerful. By the arrival of the 1900s, cooking publications were greatly in demand as a result of more people being able to read, people having more spare time and disposable income. |
