The History of Recipes
We can follow the history of `recipes` way back into history, certainly as far back as ancient Egypt, and possibly even further. In practice though, these, early cookbooks were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to historians is a collection of clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a man called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main course and desserts, something that is very familiar to us today. Aspicius recounts how the ancient Romans made use of a wide range of spices and herbs, including some familiar names for example bay, mint and dill. In the 15th century, knights returning from the crusades brought us many new foods and spices from middle-east cuisine, including spices like coriander, basil and rosemary. These new foods and tastes created a torrent in books on cookery, some of which still exist in academic collections. The introduction of television brings us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes just like those on this recipe site. |
