2 large egg whites

1 cup whipping cream
1/3 cup sugar
8 oz bittersweet chocolate *
1 1/2 tsp instant espresso powder
2 1/2 tbsp hot water
3 egg yolks
CHOCOLATE GLAZE
2/3 cup whipping cream
5 tbsp butter
5 oz chopped semisweet chocolate
GARNISH
1/3 cup fresh raspberry (optional)
1 fresh mint sprigs

The History of Recipes
We are able to trace the history of meal recipes way back into distant history, at least as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, mostly, these ancient cook books were just simple hieroglyphic or cunieform instructions for meal preparation.
As we move into Roman times 25BC a roman called Apicius assembled a number of documents describing recipes prepared by his fellow Romans. He recounts how the meals were split into appetizers, entrees and desserts, something that is very familiar to us today. Additionally, he informs us how the cooks of his times made use of many aromatic flavors, including a few that are still present in modern kitchens like bay, fennel and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from middle-east cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new herbs and spices created an outbreak in books on cookery, some of which still exist in private libraries. By the advent of the 20th century, cookery publications were in great demand, as a result of higher levels of literacy, people having increased free time and having more disposable income. |
