The History of Recipes
It is quite possible to track the history of recipes way back into the distant past, in fact as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. However, generally, these ancient records were just very simple hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to experts is a collection of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. During Roman times 25BC a roman called Apicius wrote some documents which described recipes prepared by the Romans. In his publication, he recounts how the meals were divided into appetizers, main meal and desserts, something we still use today. Additionally, he recounts how the ancient Romans used a wide range of spices, including many that are still in use today such as thyme, mint and parsley. Closer to modern times, we find two interesting cookery books from the 14th Century : a recipe book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, these two books are unconnected to the indian curry that is familiar to us all today, but rather descriptions of the types of meals on the tables of the rich and powerful of that time. In the fifteenth century, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, including coriander, parsley, basil and rosemary. These new foods and spices created an eruption in books on cooking, most of which still exist in academic collections. By the arrival of the 1900s, cook books are increasing in popularity due to more people being able to read, people having more leisure time and disposable income. |
