The History of Recipes
Written cooking instructions as an idea can be found way back into history, at least as far into history as pharonic Egypt, and maybe even further. Having said that, sadly, these early cookbooks were just very basic hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, are some tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into Roman times 25BC a roman called Apicius created a collection of scripts which described recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something that is very familiar to us today. Additionally, he informs us how the chefs of Roman times made use of many different spices and herbs, including a few that are still present in modern kitchens like bay, mint and dill. Continuing our culinary historical journey, there were two interesting recipe books from the 14th Century : a recipe book titled `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these two books are unconnected to the spicy food that appears on menues today, but rather recipes for the types of food enjoyed by the rich and wealthy people of that time. Later on, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the holy lands, such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices led to an eruption in cookery books, some of which still exist in private collections. The TV revolution gave us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like those on this recipe site. |
