The History of Recipes
Recipes as a concept can be traced far back into ancient history, in truth as far back into recorded history as ancient Egypt, and possibly even further. Interesting though that is, sadly, these old recipes were just primitive hieroglyphic instructions for preparing meals.
Progressing into Roman times 25BC a roman called Apicius created a collection of documents which described recipes prepared by his fellow Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Aspicius also informs us how the ancient cooks were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example bay, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many new foods and herbs from middle-east cuisine, including spices such as basil and coriander. These new foods and tastes prompted a torrent in publications on food, some of which are kept safe in private libraries. The TV revolution gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes just like those on our site. |
