The History of Recipes
We are able to read the history of meal recipes way back into the distant past, at least as far back as the Egyptians, and possibly even further. Interesting though that is, sadly, these old cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history are a few stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. As we move into The time of the romans around 25BC a man called Apicius assembled a few documents detailing recipes enjoyed by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius recounts how the cooks of his times were skilled in the use of many different spices, including many that are still in use today like basil, fennel and parsley. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from the holy lands, including spices such as parsley and basil. These new foods and tastes prompted an outbreak in manuscripts on food, many of which are kept safe in private libraries. During the next few centuries, the powerful families of the West competed to serve up the best banquets, and consequentially chefs and their recipe collections increased in prestige. However, it wasn`t until the 1800s that formal cookery and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, recipe books are highly popular due to better eduction, increased leisure time and a general increase in wealth. The revolution that is television brought us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this recipe site. |
