The History of Recipes
Historians have tracked the existance of recipes way back into ancient history, at least as far as ancient Egypt, and maybe further still. In practice though, mostly, these old recipes were just simple hieroglyphic recipes for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. During the time of the Roman Empire a man called Apicius created a collection of scripts describing recipes enjoyed by the Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, a very modern way of dining. He also tells us how the Roman cooks used a wide range of aromatic flavors, including a few you will know for example bay, rue and asafoetida. Over the following few hundred years, the rich families of Europe competed with each other to serve the most exotic meals, and because of this the best cooks and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, trying out, and writing down recipes common in their social group. By the arrival of the 20th century, cooking publications are in high demand, mostly due to higher levels of literacy, people having more leisure time and being a little richer. |
