Ingredients
3/4 cup raisins
1 cup water
1 1/4 cup granulated sugar
2/3 cup vegetable oil
1 large egg, slightly beaten
1 3/4 cup unbleached all purpose flour
1/3 cup cocoa
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
1/2 cup chopped nuts
GARNISH
1 confectioners' sugar
Directions
Preheat the oven to 350 degrees F. Grease and flour a 13 X 9 X 2-inch
baking pan. In a medium saucepan, bring the raisins and water to a
boil and simmer for 1 minute. Remove from the heat and cool slightly.
Stir in the granulated sugar and oil. Add the egg. Combine the
flour, cocoa, baking soda, salt and cinnamon, then stir the mixture
into the raisin mixture, blending well. Stir in the nuts. Pour the
batter into the prepared pan and bake for 25 to 30 minutes or until a
wooden pick inserted in the center comes out clean. Place on a wire
rack to cool in the pan. When cool, sprinkle with the confectioners'
sugar. If you like a design, use a paper table doily as a stencil
when sprinkling the sugar over the cake.

The History of Recipes
It is quite possible to follow the history of written cooking instructions back into the far past, in truth as far as ancient Egypt, and possibly even further. In practice though, sadly, these ancient recipes were just very simple hieroglyphic recipes for preparing meals.
As we move into Roman times around 25BC a man called Apicius created a number of documents which described recipes prepared by wealthy Romans. He tells us how the meals of wealthy Romans were divided into appetizers, main meal and afters, something that is very familiar to us today. Aspicius also informs us how the ancient chefs used many aromatic flavours, including a few that will be familiar to modern chefs such as bay, rue and parsley. Later, in the 15th century, knights returning from the crusades brought back many new foods and spices from the East, including spices like coriander, parsley, and rosemary. The introduction of these new foods and spices was responsible for a torrent in recipe publications, most of which are now in private collections. Like it or not, the introduction of TV brings us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on our site. |
