The History of Recipes
It is quite feasible to follow the history of written cooking instructions back into the distant past, at least as far into history as the Egyptians, and potentially, even further back. In practice though, sadly, these early records were just simple hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe found, according to historians are some tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. During Roman times 25BC a man called Apicius assembled a number of scripts detailing recipes cooked by the Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and desserts, something that is very familiar to us today. He also tells us how the ancient cooks used many different herbs, including some familiar names for example thyme, rue and dill. In the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab cuisine, including coriander, parsley, and rosemary. The introduction of these new herbs and spices caused an outbreak in manuscripts on cookery, the majority of which still exist in private libraries. During the succeeding few hundred years, the rich and powerful families of Europe competed to offer the most extravagent banquests, and because of this the best cooks and their recipes were much in demand. Even so, it wasn`t until the 1800s that cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, verifying, and writing down recipes common in their social group. By the arrival of the 1900s, cookery publications are in great demand, as a result of higher levels of literacy, people having more leisure time and having more disposable income. Like it or not, the introduction of television brings us TV cookery programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like those on the site you are now reading. |
