The History of Recipes
It is quite possible to follow the history of written cooking instructions back into antiquity, in truth as far back as the Egyptians, and quite possibly further than that. Having said that, these, early records were just very simple pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics are a few clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As we move into Roman times around 25BC a man called Apicius assembled some documents which described recipes cooked by the Romans. He tells us how the roman meals were divided into starters, entrees and afters, a very modern way of dining. This early Roman chef describes how the Romans were skilled in the use of a good variety of aromatic flavours, including some familiar names for example thyme, rue and dill. Later on in the 1400s, knights returning from the crusades brought us many foods and spices from Arab cuisine, such as parsley and basil. These new foods and tastes caused an explosion in books on cookery, many of which are now in private collections. By the time we get to the 20th century, cooking publications were in high demand, as a result of higher levels of literacy, more free time and disposable income. The introduction of the TV brings us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through thousands of recipes such as those found on this site. |
